Easy Banana Bread Muffins* w/ Less Sugar - SOOO GOOD!


At some point, we all struggle with the amount of sugar we consume. Here's a very simple version of banana bread, in muffin form, that will keep everyone in the house happy. My wife received this from one of her doctors when she was pregnant and had slightly elevated sugar levels. We still enjoy these regularly.


*Note - You can make a loaf, but it tends to get a little dry and hard. Muffins are the way to go here and store really nicely.


3 - Bananas, VERY ripe

1 - Egg

1 Cup (plus a little extra) - Flour

1/4 Cup - Olive Oil

1/4 Cup - Sugar

1 1/4 Tsp - Baking Powder

1/2 Tsp - Baking Soda

1/2 Tsp - Cinnamon


  • Preheat oven to 350°


  • Mash bananas in a mixing bowl until only a few smaller chunks remain. Add egg, oil and mix. Next, add flour, sugar, baking powder, baking soda and cinnamon and mix until mostly smooth. Don't over mix. You want a couple lumps. If you like, add semi-sweet chocolate chips, chopped nuts or raisins.


  • Grease muffin tin and pour batter about 2/3 full in each mold.


  • Place in center rack and cook for 18-20 minutes. Remove muffins from tin and place on cooling rack.


  • These bad boys will stay good for a couple days in a zip-lock bag, but they should be long gone before that happens.
